Disfrutar is built around surrendering an evening to the kitchen. The Classic menu revisits signatures; Festival leans toward the current season, but both are long, playful sequences in which surprise is part of the design. At €325 before drinks, the pleasure depends on everyone at the table wanting that degree of theatre, attention and expense.
